I used your post as a second reference and to reassure myself along the way. I noticed that you got a very good bulk rise. My own loaf came out a little dense (not too bad, though) and had the consistency and texture of steamed bun, which is not exactly my fav. Any advice? I figure a longer bulk rise might help, but incase you had similar issues, thought I should ask.
